Buffalo Mozzarella Breakfast Burger

Ingredients
2 tbs butter
4 eggs
4 thick slices of tomato
1 bunch of basil leaves
250 grams buffalo mozzarella
4 sour dough rolls
2 tbs extra virgin olive oil
Pre heat
the oven to 170 degrees Celsius. In a
frying pan over a medium/low heat warm the butter, crack an
egg into the pan and cook over easy. Repeat for
the three other eggs. Slice the tomato and set
aside. Pick out the largest basil leaves in the
bunch and set aside. Slice the mozzarella into 4
thick slices and set aside. Slice the 4 sour dough
rolls in half horizontally and place on a baking
dish and lightly toast in the oven. Assemble the
sandwiches by stacking the mozzarella, tomato
topped with basil leaves and the fried egg on
top. Season with salt and pepper and drizzle with
olive oil. Before serving break the egg yolk so
that it drips over the rest of the ingredients.
