Italian Sausage Dumplings

Ingredients
360 grams Ciabata Italian Bread
3 tbs finely chopped parsley
3 eggs – beaten
200 grams Italian sausages – casings removed *
1/4 cup flour
1/4 cup chicken or vegetable stock
salt and freshly ground pepper
grated
Parmigiano-Reggiano cheese for garnish
1L of vegetable or chicken stock

*I have used “Little Boys” Lamb rosemary & garlic sausage available from most good delis. 

Cut the bread into cubes and place in a large bowl.  Add the parsley and beaten eggs.  Crumble the sausages and add to the bread mixture.  Mix well until all the ingredients are thoroughly combined then set aside to rest for 15 minutes. 

Add the flour and the stock and stir well to form dough.  Break off a piece of the dough and form it into a small ball.  Repeat with the remaining dough to form dumplings.  In a large pot over a medium heat, warm the vegetables stock and add the dumplings and simmer on a very gentle heat for 1 hour.  To serve, ladle the dumplings and broth into bowls, season with salt and pepper. Drizzle with extra virgin olive oil or truffle oil and garnish with the grated Parmigiano-Reggiano cheese.
