Kumara Stuffed Tomatoes

Ingredients
300 grams peeled and finely diced kumara
1 tbs capers (if packed in salt, rinse well)
4 large tomatoes – halved, cored and seeds removed
Peel of 2 courgettes – grated
1/2 cup
Parmigiano-Reggiano
cheese
Extra virgin olive oil for drizzling
Salt and pepper
Pre heat the oven to 180 degrees Celsius. In a
casserole dish place the kumara and drizzle with
olive oil and bake in the oven until the kumara is
tender, 15-20 minutes. In a bowl combine the
kumara with the capers, Parmigiano-Reggiano and
grated courgette. Stuff the eight tomato halves
with the mixture, season with salt and pepper and
drizzle with olive oil. Bake for about 10 minutes
and serve.
