Meat Loaf and Courgette
Skewers

Ingredients
3 courgettes sliced to 1 cm thickness
11/2 cups meat loaf cut to 1 cm slices to match the size
of the courgette slices
Extra virgin olive oil
for drizzling
salt
lettuce leaves for garnish
sliced cherry tomatoes for garnish

Parmigiano-Reggiano – shaved with a potato
peeler
Pre
heat the oven to 180 degrees Celsius Thread wooden
skewers with alternate pieces of courgette and meat
loaf; beginning and ending with courgettes. Transfer
skewers to a baking sheet, drizzle the skewers with
olive oil and season with salt and pepper. Bake for
20 minutes, turning once. Serve and garish with
lettuce leaves and sliced cherry tomatoes along with
the shaved
Parmigiano cheese.
