Spicy Leaf Salad with Mexican Dressing

Ingredients

Method

  1. In a small bowl combine lime juice, shallot, Mexican seasoning, ginger and honey. Gradually whisk in olive oil then season to taste with salt and pepper. Place in refrigerator until ready to use (this dressing can be made in advance).
  2. In a large bowl combine lettuce, herbs, tomato, cucumber and avocado. Drizzle over enough dressing to coat the leaves but not weigh them down.
  3. Arrange salad in a serving bowl or platter then grate almonds over the top (use a Microplane if you have one) to create an almond-like snow.
