Method

  1. Bring steaks to room temperature and pat dry with paper towel.
  2. Lay steaks flat and generously season on both sides, using a different seasoning for each, and lightly massage into meat.
  3. Heat oil in a frying pan over medium-high heat until shimmering. Add steaks and cook for 3–4 minutes on each side, or to your desired level of doneness.
  4. Remove steaks from pan, cover with tinfoil and set aside to rest for 5–10 minutes before serving so the meat relaxes and reabsorbs its juices, ensuring a tender, juicy steak.

Shimmering means the oil is heated to a point where the surface begins to ripple but does not smoke.


If you serve your steak sliced, use a sharp knife and cut across the grain.
