Method
- Bring steaks to room temperature and pat dry with paper towel.
- Lay steaks flat and generously season on both sides, using a different seasoning for each, and lightly massage into meat.
- Heat oil in a frying pan over medium-high heat until shimmering. Add steaks and cook for 3–4 minutes on each side, or to your desired level of doneness.
- Remove steaks from pan, cover with tinfoil and set aside to rest for 5–10 minutes before serving so the meat relaxes and reabsorbs its juices, ensuring a tender, juicy steak.
