Method
- In a saucepan over medium heat, add vinegar, sugar and ginger and bring to the boil. Remove pan from heat and allow to cool before adding cucumber. Set aside to rest for at least 20 minutes.
- Mix together cream cheese, Tabasco and capers. Transfer to a small serving bowl.
- Place salmon on a large serving platter. Arrange pickled cucumber around the salmon and serve with Jalapeño Caper Cream Cheese and lemon wedges on the side.
