This bread is so easy, make it either as a whole or use a smaller pan for individual servings.

Method

  1. Preheat oven to 180°C.
  2. Preheat oven to 180°C.Dissolve baking soda in yoghurt. Set aside to ferment for 2–3 minutes, it will start to bubble and foam.
  3. In a mixing bowl, add flour and salt then stir in yoghurt mixture and soda water until completely combined.
  4. Place a 20cm heavy-based frying pan over medium heat. Add oil, thyme and pepper and heat until oil is shimmering. Pour crumpet mixture into pan and cook for around 5 minutes on each side, until a golden colour.
  5. Transfer crumpet(s) to oven and bake for 5–10 minutes until cooked through.
  6. Cut in wedges and serve.

Simon says ...

Shimmering means the oil is heated to a point where the surface begins to ripple but does not smoke.


If you choose to make smaller individual crumpets, the oven cooking time will be less.


This crumpet bread goes perfectly with my Mushroom Truffle Mascarpone Dip or as an accompaniment to my Truffle and Green Pea Soup.
