Method
- In a high-speed blender or bullet, add ginger, tamari, water, lemon zest and juice, almonds, parsley, olive oil and salt. Blitz until smooth, adjusting consistency with a little extra water if required.
- Swirl 2 Tbsp dressing over the bottom of each serving plate or flat bowl.
- Slice 1 piece of mozzarella for each portion and place on top of dressing.
- Arrange lettuce leaves over dressing and mozzarella.
- Drizzle over balsamic and serve.
