Hemp Seed, Prune and Whiskey Cake

Did you know that three teaspoons of hemp seeds contain your required daily intake of magnesium? These little babies are such a versatile and tasty superfood. Talking of superfoods, let’s go to prunes, which are a powerhouse of antioxidants, just saying! Anyway, with prunes soaked in your favourite whiskey and the hemp seeds, I’m telling you, this cake will blow you away.

  1. Preheat oven to 180°C. Line the base of a 20cm round springform cake tin with baking paper.
  2. In a bowl, combine prunes and whiskey then set aside to soak for at least 20 minutes. Drain off any residual whiskey and discard.
  3. Meanwhile, in a large mixing bowl sift in flour, cinnamon, baking soda and baking powder. Add hemp seeds and salt then set aside.
  4. In the bowl of an electric mixer, add oil, sugar, whole eggs and vanilla. Beat on medium speed for 6–7 minutes, until mixture is light in colour, has doubled in size and has thickened a little.
  5. Remove bowl from mixer. Using a large spatula, add dry ingredients to bowl and gently fold to combine. Add whiskey-soaked prunes and egg white and gently fold to combine.
  6. Pour cake batter into prepared cake tin and smooth the top with a spatula. Place in oven and cook for 30–40 minutes, until a skewer inserted in the middle comes out clean.
  7. Remove cake from oven and leave to cool in the tin before turning out.

Serve with a dollop of coconut yoghurt or natural Greek yoghurt.
