Italian Scallop and Bacon Skewers

Method

  1. Preheat BBQ grill to medium-high.
  2. In a frying pan over medium heat, add bacon and cook until limp but not browned. Transfer to paper towel to drain off excess fat and set aside.
  3. In a large bowl add scallops and Italian seasoning and toss to coat.
  4. Wrap each scallop in a piece of bacon, securing it through the centre with a bamboo skewer. Alternate with a cherry tomato—2 scallops and 2 cherry tomatoes per skewer. Repeat with remaining scallops and tomatoes.
  5. Brush BBQ grill lightly with oil. Place skewers on grill and cook, turning regularly, until just cooked through (this should take around 6 minutes).
  6. Transfer to a serving plate, garnish with parsley and serve.

Simon says ...

If using bamboo skewers, soak them in water for a couple of hours before using, to help stop them burning while cooking.
