
Italian Scallop and Bacon Skewers

Method
- Preheat BBQ grill to medium-high.
- In a frying pan over medium heat, add bacon and cook until limp but not browned. Transfer to paper towel to drain off excess fat and set aside.
- In a large bowl add scallops and Italian seasoning and toss to coat.
- Wrap each scallop in a piece of bacon, securing it through the centre with a bamboo skewer. Alternate with a cherry tomato—2 scallops and 2 cherry tomatoes per skewer. Repeat with remaining scallops and tomatoes.
- Brush BBQ grill lightly with oil. Place skewers on grill and cook, turning regularly, until just cooked through (this should take around 6 minutes).
- Transfer to a serving plate, garnish with parsley and serve.

If using bamboo skewers, soak them in water for a couple of hours before using, to help stop them burning while cooking.
