
Magical Moroccan Mushroom Soup

Method
- In a heavy-based pot, heat butter over medium heat. Add onion and cook, stirring regularly, until soft and translucent. Add mushrooms and cook until there is no more liquid in the pot.
- Add potato, Moroccan seasoning, hot water and stock concentrate. Bring to the boil then reduce heat and simmer until potato is cooked (5–8 minutes).
- Add cream and return to the boil then add coriander.
- Remove pot from heat and process with a stick blender until smooth. Stir through orange zest then season with salt to taste.
- Pour into soup bowls and serve immediately.

Garnish with crème fraîche or plain Greek yoghurt and picked coriander leaves, with crusty bread alongside.
Use a food processor or blender if you don’t have a stick blender.
