Magical Moroccan Mushroom Soup

Method

  1. In a heavy-based pot, heat butter over medium heat. Add onion and cook, stirring regularly, until soft and translucent. Add mushrooms and cook until there is no more liquid in the pot.
  2. Add potato, Moroccan seasoning, hot water and stock concentrate. Bring to the boil then reduce heat and simmer until potato is cooked (5–8 minutes).
  3. Add cream and return to the boil then add coriander.
  4. Remove pot from heat and process with a stick blender until smooth. Stir through orange zest then season with salt to taste.
  5. Pour into soup bowls and serve immediately.

Simon says ...

Garnish with crème fraîche or plain Greek yoghurt and picked coriander leaves, with crusty bread alongside.


Use a food processor or blender if you don’t have a stick blender.
