Method

  1. Preheat oven to 150°C.
  2. Place ham on an oven tray and heat in oven for 15 minutes (this will make removing the skin from the ham easier).
  3. Meanwhile, in a large bowl mix together maple syrup, rum and Mexican seasoning.
  4. Remove ham from oven and increase temperature to 180°C. Peel off the skin, leaving as much of the fat layer intact as possible. Score fat diagonally—to make diamond shapes—and stud with cloves.
  5. Brush ham with a generous coating of glaze and place in oven. Baste ham after 15 minutes’ cooking, again at the 45-minute point, with a final baste at 1 hour. Continue cooking for 15 minutes then remove ham from oven and set aside to rest before carving.
