
Mexican BBQ Kumara with Sour Cream and Chives

Method
- Preheat BBQ to medium. Cut 8 squares of baking paper slightly larger than the kumara.
- In a mixing bowl combine sour cream, half of the Mexican seasoning and half of the chives. Set aside.
- Drizzle kumara with olive oil and remaining Mexican seasoning. Place each kumara in the middle of a baking paper square then wrap in tinfoil.
- Place foil-wrapped kumara on BBQ and cook for 15 minutes. Turn kumara over and cook for a further 15 minutes. Turn again then unwrap and check if cooked—a wooden skewer should easily pass through.
- To serve, split open the top of each kumara and top with a spoonful of sour cream mixture and remaining chives. Serve warm in the tinfoil.
