Mexican BBQ Kumara with Sour Cream and Chives

Method

  1. Preheat BBQ to medium. Cut 8 squares of baking paper slightly larger than the kumara.
  2. In a mixing bowl combine sour cream, half of the Mexican seasoning and half of the chives. Set aside.
  3. Drizzle kumara with olive oil and remaining Mexican seasoning. Place each kumara in the middle of a baking paper square then wrap in tinfoil.
  4. Place foil-wrapped kumara on BBQ and cook for 15 minutes. Turn kumara over and cook for a further 15 minutes. Turn again then unwrap and check if cooked—a wooden skewer should easily pass through.
  5. To serve, split open the top of each kumara and top with a spoonful of sour cream mixture and remaining chives. Serve warm in the tinfoil.

Bake kumara in the oven if you prefer.
