Method

  1. Preheat oven to 180°C. Line a baking tray with baking paper.
  2. In a large bowl, combine oil and Moroccan seasoning. Add chicken pieces and mix well to evenly coat.
  3. Thread chicken onto skewers (about 50g per skewer). Place skewers on prepared tray and bake in oven for 15 minutes or until chicken is cooked through (there should be no pink flesh and juices should run clear when pierced with a sharp knife).
  4. Serve with a salad as a light meal or with minted yoghurt dip as a delicious canapé.

Simon says ...

If using bamboo skewers, soak them in water overnight before using to help stop them burning while cooking.


To make minted yoghurt dip, mixed chopped fresh mint into a Greek-style natural yoghurt to taste. Garnish with grated lemon zest and Moroccan seasoning
