
Prawn and Butter Lettuce Wrap with Apple Horseradish Sauce

Method
- In a small pot over medium heat, add apple and water and cook slowly, stirring regularly, for 15–20 minutes until apple is soft. Transfer to a blender along with horseradish. Process until smooth then set sauce aside.
- In a bowl, add tomato, coriander, lime juice and olive oil and mix well to combine. Season to taste with salt and pepper then set aside.
- Heat butter in a frying pan over medium heat. Add prawns and cook, stirring, until just cooked through.
- To assemble, place wraps on a clean bench then layer up with lettuce, cucumber, prawns and tomato salad. Top with apple horseradish sauce and a sprinkling of coriander. Serve and enjoy!
