Method
- In a heavy-based pot, heat oil over medium-high heat. Add garlic, onion, celery and carrots and cook, stirring regularly, for 5–8 minutes until vegetables start to soften.
- Add tomato paste and Italian seasoning and cook for a further 3 minutes.
- Add tomatoes, wine, stock concentrate and hot water. Bring to the boil then simmer for 5 minutes.
- Season with pepper to taste and serve.

Serve in bowls or cups with crème fraîche or sour cream and a sprig of fresh herbs, with a side of crusty garlic bread or your favourite cheese grilled on toasted baguette.
