Method

  1. In a high-speed blender or bullet, add ginger, tamari, water, chilli, almonds and lemon juice and process until smooth. Adjust the consistency of the marinade if necessary by adding a little more water.
  2. In a mixing bowl add tuna then fold in marinade. Cover and set aside for around 1 hour at room temperature.
  3. In a small bowl add avocado then gently stir in lime juice.
  4. To assemble, place lettuce cups in serving bowls. Divide marinated tuna evenly between cups followed by avocado and rock melon. Top with pickled radish, sprinkle over sesame seeds and serve with lime wedges.

Simon says ...

Dice the avocado just before combining with the lime juice, as this will stop the avocado from browning.


An alternative serving suggestion is to place ring moulds on plates then tightly pack moulds with marinated tuna. Smear each with sour cream followed by avocado and rock melon. Carefully remove moulds then top with pickled radish and serve with micro salad greens and lime wedges.
