Spicy Moroccan Brussels Sprouts with Walnuts

The health benefits of Brussels sprouts are incredible, just don’t overcook them so their valuable nutrients are retained. Walnuts not only taste fantastic with the Moroccan seasoning, they are also high in vitamin E and a tremendous source of omega-3 fatty acids.

Method

  1. In a frying pan over medium heat, add oil and butter then toss in chilli and salt. Heat until butter is bubbling then increase heat to high and add Brussels sprouts. Cook, stirring, for 3 minutes or until sprouts are just cooked, slightly crunchy and a little charred.
  2. Add Moroccan seasoning and walnuts and toss to combine. Transfer to a bowl and serve immediately.

Simon says ...

For a complete meal, add prawns at the same time as the Brussels sprouts for a delicious seafood dish. Or for a great vegetarian option, add cubed firm tofu when adding the sprouts.
