As is the case with whitebait, this recipe is really dependent on how much you can catch! Or moreover, how much you can afford, as it does get quite pricey.

Method

  1. Butter the bread and set aside.
  2. Place flour in a plastic bag then add whitebait and toss well to evenly coat. Remove whitebait from bag and shake off excess flour.
  3. In a frying pan, heat oil over medium-high heat. Add whitebait and stir-fry for 1–2 minutes, until golden and crispy. Transfer to a sieve to drain.
  4. Divide whitebait evenly between bread slices, season with salt and pepper and sprinkle with parsley. Roll bread up to encase whitebait and secure with a toothpick. Serve immediately and enjoy!
